Thai Salad with Norwegian Cod

What to do

Pre-heat the oven to 180°C.

Mix together all the dressing ingredients.

Cut the cod into small pieces, and brush each with a little of the marinade.

Place the fish in a greased ovenproof dish, and bake for approx. 15 minutes. It should have an inner temperature of 60°C.

Place the lettuce, cucumber and pepper onto 4 serving plates. Drizzle over a little dressing, place the fish on top of the salad and add the rest of the dressing.

Garnish with chopped peanuts and fresh herbs.

700-800 g Norwegian cod fillet
head of lettuce, any kind
cucumber, sliced
red pepper, sliced
A few
rocket leaves
4 tablespoons
coarsely chopped peanuts
Fresh herbs, e.g. a few chives, basil or chervil


Squeezed juice of 1 lime
1 tablespoon mustard
3/4 dl olive oil
1/3 dl sambal oelek
